Summer Cherry Berry Salad with Honey Lemon and Mint Dressing

This fresh, light, and delicious fruit salad is one that is bound to be a crowd pleaser. Using perfectly ripe summer fruits, the sweetness contrasts perfectly with the lightly sour dressing. Allowing the salad to marinate for 30 minutes creates the perfect blending of flavors.





Ingredients:

30 dark sweet cherries (more or less)

30 fresh blueberries (preferably quite plump)

1/2 tablespoon raw honey

2 tablespoons fresh lemon juice

2 teaspoons vanilla extract or vanilla bean


Directions:

  1. In a large colander, wash the blueberries and cherries.

  2. Take the cherries out, pit them all, and slice into quarters

  3. Add blueberries and cherries into a large bowl.

  4. In a small bowl, whisk together the lemon juice, honey, and vanilla.

  5. Pour the dressing onto the salad and toss thoroughly.

  6. Cover the bowl with saran wrap and place in refrigerator for a minimum of 30 minutes, up until serving.

  7. Serve in individual parfait cups with a some torn fresh mint, making sure to use all the liquid left in the bowl.
